INGREDIENTS

  • 1 cup liquid egg whites
  • 5 whole eggs
  • 1/4 cup cottage cheese
  • 1/4 cup chopped spinach

OPTIONAL ADD-INS

  • Salt and pepper
  • Garlic powder
  • Red pepper flakes

INSTRUCTIONS

  1. 1Preheat oven to 350°F (175°C) and spray a muffin tin with cooking spray
  2. 2Whisk together egg whites and cottage cheese
  3. 3Stir in spinach and any optional seasonings
  4. 4Pour mixture into muffin tin, filling each cup about 3/4 full
  5. 5Top with one whole egg
  6. 6Bake for 20-25 minutes until set and slightly golden
  7. 7Let cool before removing from tin
