INGREDIENTS
- 1 cup liquid egg whites
- 5 whole eggs
- 1/4 cup cottage cheese
- 1/4 cup chopped spinach
OPTIONAL ADD-INS
- Salt and pepper
- Garlic powder
- Red pepper flakes
INSTRUCTIONS
- 1Preheat oven to 350°F (175°C) and spray a muffin tin with cooking spray
- 2Whisk together egg whites and cottage cheese
- 3Stir in spinach and any optional seasonings
- 4Pour mixture into muffin tin, filling each cup about 3/4 full
- 5Top with one whole egg
- 6Bake for 20-25 minutes until set and slightly golden
- 7Let cool before removing from tin

Make a big batch and store in the refrigerator for up to 5 days. Reheat in the microwave for 20-30 seconds when ready to eat.
